Easiest 4-Ingredient Grilled Pesto Chicken


Here is an extremely easy grilled chicken recipe. My Grilled Pesto Chicken is rich in delicious flavors and yet comes together in 20 minutes with only 4 ingredients!




This is what I make when I am lazy to cook.

As I've said, this recipe only has 4 ingredients! The preparation is so minimal it almost feels like cheating. and then the taste… well, you will just have to take my word for it. Super sarap!


Here's some tips on how I do it in 20 minutes:

There's one pot of boiling water for the pasta.

Another pot is for simmering the tomato sauce. I don't really have to simmer the tomato sauce, but I always do. I find that it intensifies the flavors of the tomatoes and the herbs. But you can skip this step if you don't want to do it. The Contadina bottled sauce is already packed with so much flavor as it is.

Then, there's a grillpan for the chicken. I bought a Le Creuset double-burner griller because I find it time-efficient to have a big griller since my family eats more than the ordinary folks. So I can cook more chicken breast fillets in one go.


This Grilled Pesto Chicken Topped with Tomatoes and Mozzarella is the perfect recipe for a busy weeknight dinner or for a lazy Monday morning lunch baon. 

Tender grilled chicken is flavored with Contadina pesto sauce, topped with Contadina tomato sauce with garlic and herbs. Served with a layer of creamy mozzarella on top. Garnish with fresh basil and caramelized balsamic vinegar.

The pesto and tomatoes are so flavorful, it will make it appear like you slaved in the kitchen for this! 
Remember to heat the stove-top grill until very hot. 

It has to be very hot to get those nice grill marks.


4-Ingredient Grilled Pesto Chicken

Ingredients:
chicken breast fillet 
Contadina pesto sauce
Contadina tomato sauce
Mozzarella cheese
salt and pepper for seasoning

optional for garnish:
fresh basil leaves
caramelized balsamic vinegar

Directions:
1. Heat the grill pan on the stove over high heat. Season the chicken breast generously with salt and pepper. 
2. Grill the chicken. Lower heat to medium, turning once, until cooked through but not dry, 4 to 6 minutes each side.Turn off fire.
3. Once cooked, spread 1-2 tablespoons of the Contadina pesto sauce on top of one side of the chicken breast.
4. Then top with the Contadina tomato sauce.
5. Put mozzarella cheese over the top of the chicken breasts.
6. Cover for and allow cheese to melt from the residual heat.
7. Garnish with fresh basil and caramelized balsamic vinegar. This is optional.
8. Serve over a bed of rice (for my GF girls) or a plate of pasta. Enjoy!
