Weekend Footnotes

I look forward to posting my Weekend Footnotes because it is almost always full of food photos!  And this weekend is no different.

The mommy of one of B's good friends texted me last week if we wanted some fresh ramen noodles. Who says no to that, right?  So of course, I quickly told her that C and the kids are ramen fanatics!  She sent over a bagful of noodles.  She has been busy perfecting her fresh ramen noodles recipe because she has plans of supplying to the local ramen restaurants.

I immediately searched online for ramen broth recipe, and I found out that I do not have the pateince and the inclination to make the tonkotsu broth because it is so time-consuming.  I would just rather order this when we eat out.  I just settled for something that is easy to do, so miso ramen broth it is!

J helped me make the marinated soft boiled eggs, which you can see in the upper right in the photo below.

Zucchini Lasagna: A Noodle-less & Meat-less Lasagna Version

Have you seen the movie, Cloudy With A Chance Of Meatballs?  Everyone in my family loved that movie because we all love to eat.  Lately, it seems that I have been living out the movie!  Only in my case, it seems like I have a cheese cloud following me the past two weeks!  It is surely heaven for this cheese-lover!  I have to quickly bring out all my recipes with cheese... savory and sweet!

As promised, I am going to share with you my recipe for a meat-less and noodle-less lasagna. This is perfect when you want to feed your family something light, because aside from having less carbo, it is also guilt-free because it is a vegetarian lasagna, too.

This recipe replaces the lasagna noodles with thinly sliced zucchini, and is such a yummy way to lessen gluten intake. My kids all suffer from skin-asthma, and I've noticed that their skin erupt in rashes if they eat too much gluten. So, as much as they love pasta, I have set a limit to how much pasta they can consume.
Since it is meat-less and noodle-less, I feel like we should balance it all out by indulging in cheese - lots and lots of it!  The topping and filling includes lots of cheese, your kids won't even notice the veggies!

Weekend Footnotes

Another new week is upon us?  Do you also have the same feeling that the summer days are passing by so quickly.  Blink and the next thing we know, summer's over!  I am enjoying summer's easy sked so much I want it to never end. hahaha!:)

Last weekend I was running my own marathon - in the kitchen! hahaha!  I made zucchini lasagna, and it was so good that my carniverous kids forgot it was meatless, too.   I will be sharing the recipe in a few days, for sure within the week so you can give it a try for Holy Week.  This noodle-less and meat-less lasagna taste just like the real thing, thanks to the Perfect Italiano cheese!

This family loves cheese! When Perfect Italiano sent over some of their products for us to sample, it is only expected that the kitchen is the busiest place in the house!
